Classic Cinnamon Loaf

This is just about one of the simplest, you-already-have-all-the-ingredients-in-your-pantry, takes-you-five-minutes kind of loaves that fills the craving for something sweet to go with your coffee. It’s lovely fresh from the oven, but also packs well for the next day.

For the batter:

  • ¼ cup unsalted butter, softened
  • ¼ cup white sugar
  • 2 eggs
  • 2 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • 1 cup sour milk*

For the filling

  • 3 Tbsp brown sugar
  • 1 Tbsp cinnamon

Preheat the oven to 325°. Lightly grease a loaf pan with butter. In a large mixing bowl, combine batter ingredients in the order given, taking care not to overmix. Pour about half of the batter into the loaf pan. Sprinkle the brown sugar, then the cinnamon over the batter. Top with the remaining batter. Bake for about 40 minutes, or until a toothpick inserted into the middle of the loaf comes out clean.

*To sour your milk, just add a tablespoon of lemon juice or white vinegar to get a hint of tanginess.
